The difference between
ice cream and gelato
Ice cream and gelato's two main ingredients are both milk and cream, but it is the amount of each that results in differing desserts. As ice cream usually contains more cream than milk, gelato is made with a greater proportion of whole milk to cream. Egg also distinguishes the two desserts, our Original Recipe ice cream includes egg yolks while the gelato does not contain this ingredient.
Ice cream and gelato differ not only with ingredients but with the process as well. Gelato is churned much slower than ice cream, making the dessert creamier and having less air than regular ice cream contains. Gelato is composed of twenty five to thirty percent air, while ice cream is composed of air up to fifty percent.
